Michael V’s Restaurant and Bar is a locally owned restaurant with an ambiance all its own. Owners
Michael and Carol Minden have been providing delicious meals as a couple for years and for the last 9
years at Michael V’s.
The restaurant is very well known for its coconut cream pies but it seems that everyone has their
favorite menu item. As we were sitting down visiting with Chef Michael a customer approached raving
about her salad that had come with her dessert. She raved, “It is a dessert and a salad all in one”! After
eating the salad I have to agree. Chef Michael has been gracious enough to share this recipe with us.
2014 Summer Time Recipe.
Mixed Greens 3oz
Raspberry Vinaigrette 2oz
Sun Dried Cherries 1oz
Sun Dried Apples 1oz
Candied Pecans 1.5oz
Goat Cheese 2oz
Mix greens with raspberry vinaigrette place on plate. Top with cherries, apples, goat cheese and pecans.
To reconstitute dried apples and cherries
Sugar 1 cup
Water 1/4 cup
Mix sugar and water together and bring to a boil pour over dried fruit and let cool remove from liquid
and use on salad. These should be done separately so they do not bleed into each other.
Use store bought raspberry vinaigrette or BONUS!
1/2 cup raspberry vinegar
1 cup fresh or frozen raspberries (thaw frozen first)
1/2 cup corn syrup
2tsp. Worcestershire sauce
1 TBLS Dijon mustard
Salt and pepper to taste
Blend all together in food processor.

You can visit Michael V’s at Monday- Friday for lunch from 11:00am to 2:00pm and for dinner from
5:00pm to 9:00pm. On Saturday join them for dinner from 5:00pm to 9:00pm. Make a reservation for
your party or just stop in for lunch or dinner.
Fun Fact: Michael V’s has sold 25,000 slices of Coconut Cream Pie and 1,000 whole pies in the last 9
years! That is some good pie!
